Happy New year Folks!!!
I took a break because I feel ill from stress, working full time doing multiple things and handling the kids can take its toll but I’m back and better with a creative Pancake recipe.
I was excited about the holidays last year because for the first time since forever I was going to spend Christmas and New year with my family, then the nanny miraculously decided she wanted to go home for Christmas. So I was stranded with 2 kids, a husband and work. It was TOUGH!!!
In the midst of the madness I still managed to create Frosty the pancake man and Kunmi and Ire loved and I am super proud of myself. So here is the recipe so you can get the stamp of approval from your kids.
Things you need
100g Flour
2 Eggs
1 tbs Sugar ( or as much as you want)
Salt (Optional)
1/2 tbs Baking Powder
300 ml Milk
Chocolate Chips
Icing Sugar
1tbs Vanilla Essence
Butter
Strawberries
Whipped cream
Bacon
The Main Main
Fry the Bacon in a little oil till its crispy, once its ready set aside. In a mixing bowl combine the dry ingredients, beat the eggs and milk together and slowly mix into the dry ingredients, add the Vanilla Essence.
Put some butter in a frying pan , then pour the batter in with a measuring cup in the shape of an 8. To achieve this use a bigger measuring cup for the bottom and a smaller cup for the top. You want to get an 8 not 2 circles.
Once it ready, put on the eyes, nose and mouth using chop chips. Cut a strawberry in half for the hat and use the whipped cream to do some more decorating like the picture above. The Bacon serves as a scarf and then you sprinkle the icing sugar for snow.
